This whimsical treat will be ready to gobble in minutes.

Serves 6 | Prep 2 minutes | Cook 5 minutes

Method

  • Whip the cream until it stands in stiff peaks, 4 minutes.

  • Fold the zest of the lime into the cream.

  • Add the crushed meringue nests and most of the strawberries, then fold it all together. Spoon into 6 small or one large bowl.

Ingredients

  • 300mL cold thickened cream

  • 1-2 limes zest only

  • 6 meringue nests (300g), crushed

  • 500g strawberries, washed, hulled and sliced

Notes

Garnish with remaining strawberries and a little extra lime zest.
