Beef and Eggplant Pasta Bake

Ingredients:
1 chopped onion
* 6 finely chopped lean bacon rashers
* 2 cloves garlic
* 750g lean beef mince
* 2 tablespoons tomato paste
* 2 x 400g cans IGA Diced Tomatoes
* 1 grated carrot
* 2 tablespoons chopped oregano
* 300g penne pasta
* 1/2 cup chopped IGA Grilled Eggplant Slices
* 1/2 cup chopped IGA Grilled Peppers
* 1 1/2 cups grated light cheese


Description & Method:
Spray a large heated frying pan with cooking oil. Cook 1 chopped onion, 6 finely chopped lean bacon rashers and 2 cloves garlic. Add 750g lean beef mince and cook until brown. Add 2 tablespoons tomato paste, 2 x 400g cans IGA Diced Tomatoes and 1 grated carrot. Cook 5 minutes or until thick. Stir in 2 tablespoons chopped oregano. Cook 300g penne pasta and place in a 10-cup capacity ovenproof dish. Top with mince mixture, 1/2 cup chopped IGA Grilled Eggplant Slices and 1/2 cup chopped IGA Grilled Peppers. Sprinkle with 1 1/2 cups grated light Cheese. Cook under a hot grill until browned.
